The usability difference that I see between the iPhone and a notebook computer are these:
1) the ability to enter alot of data
2) pixel precision computing with a mouse
So unless a tablet (without a keyboard and mouse) can reconcile this gap effectively, I can't see it being successful.
I wouldn't be surprised if Apple were doing alot of R&D on a tablet, but I don't think we'll see one soon (within the next year).

Actually as towards pixel perfection look at the Cintiq tablet. Artist use it all the time. And as towards handwriting recognition, if you go and look at the video for the iPhone 3G you will see it will have the capability of recognizing I believe it was Japanese writing.If they can recognize all the little dots and stuff in Japanese, it shouldn't be that difficult for English.
