Macbook Pro hands down. The extra processing power for running those the windows environment comes in handy. Wait a bit though. Macbook Pros and Macbooks are due for an update soon.

So, after the aforementioned update I'd go for the Macbook if I were You....
- You won't need the extra graphics bang of the pro - is Your HD FireWire? then You'd be in some kind of a conflict- but due to the reduced footprint and weight while being REALLY powerful all things point to the MacBook if You ask me... btw, I like to run my system as you describe it: no frills, no fancy animations, clean setup... the difference is, I do it on a 3 year old PB12" with 1GB of RAM, running OS 10.5.5 without a slowdown to talk about... you could opt to go for the "lighted keyboard" MacBook with 4GB RAM if you want.... if You haven't bought anything yet, that is ;-)
