font issues...
Hey Twister... actually the "font issue" is not only depending on how your mail client is set up but also how the recipient's is set up!
afaik in outlook and thunderbird there's a setting as well to display all incoming mail in a specific font or exchange rtf to basic fonts automatically... also, if Your email partner unchecks "Use the same format for responding" under "composing" in mail prefs, your message will seem to have appeared differently than it really did, due to the reformattin of the reply... You see, there's a whole load of ways to distort what You sent font- and style- wise.... not sure it's worth the effort to really try enforcing these things- you might want to rely on convincing content rather than nice looks ;-)

mail or thunderbird?
As to the mailing programs, I worked with Thunderbird before but I love the integration of the address book into mail, as well as the integration of mail into iCal and Address book... mail's doing an extraordinary job for me, no way of switching to anything else...

I think just about every email application or a good share of them can be set up to display email to the user's preference. No matter what font one person types in does not mean that it will be displayed on the veiwer's screen in the same way.
Personally I like the mail app that comes with my Macs. That is what I have used since it was available in OS X. There have been a few times I have had to export all my email to another computer. I save a good share of my business email as well as my personal email. I also use my sync feature on all my computers just in case I have a problem with my email computer, I can pull up my accounts because they have been synced on another Mac. This way I can still receive and send email.
